Barley (Hordeum vulgare L.) is one of the original wild "heritage" food crops of Old World agriculture. Archaeological remains of barley grains found at various sites in the Fertile Crescent (a region in the Middle East where civilization began) indicate that barley cultivation began about 8000 BC! Barley is considered to be the first cereal grain cultivated by humans. The beautiful leafy grasses of barley were reportedly used since biblical times in ancient Asian and Middle Eastern cultures. In the 1930's barley grass began to be recognized as a nutrient-rich substance containing natural beta carotene, vitamins B1, B2, B6, B12, pantothenic acid, folic acid and vitamin K. Minerals present in barley grass include potassium, calcium, iron, phosphorus, and magnesium.
